Sunday Supper...Sautéed Tilapia with Lemon-Peppercorn Pan Sauce

 

We're starting to feel a little better around here, and I really appreciate your comments and emails.

Tilapia is a favorite for us, and after all the heavy food around the holidays it's sounding real good for Supper.

There are so many ways to prepare tilapia.  This recipe adds a little twist with the green peppercorns that sounds yummy to me.

 

Sautéed Tilapia with Lemon-Peppercorn Pan Sauce

Recipe from Cooking Light

 

Ingredients

3/4 cup fat-free, less-sodium chicken broth

 1/4 cup fresh lemon juice

1 1/2 teaspoons drained brine-packed green peppercorns, lightly crushed

1 teaspoon butter

1 teaspoon vegetable oil

 2 (6-ounce) tilapia or sole fillets

 1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

1/4 cup all-purpose flour

2 teaspoons butter

Lemon wedges (optional)

 Preparation

Combine first 3 ingredients. Melt 1 teaspoon of butter with oil in a large nonstick skillet over low heat. While butter melts, sprinkle fish fillets with salt and black pepper. Place the flour in a shallow dish. Dredge fillets in flour; shake off excess flour.

Increase heat to medium-high; heat 2 minutes or until butter turns golden brown. Add fillets to pan; sauté 3 minutes on each side or until fish flakes easily when tested with a fork.

Remove fillets from pan. Add broth mixture to pan, scraping to loosen browned bits. Bring to a boil; cook until reduced to 1/2 cup (about 3 minutes). Remove from heat. Stir in two teaspoons of butter with a whisk.

Serve sauce over fillets.

Garnish with lemon wedges, if desired.

Sunday Supper Mexican Lasagna

 

We're back from Houston...just a few more  details and we will have completed the install of what started out as an online design job of a family and breakfast room...

The project grew...our client jumped into our design aesthetic hook, line, and sinker... a big part of that aesthetic is unique found objects, antiques and accessories... we ground these with functional modern furniture...  our own shop is filled with so many of the unique things, so after a LOT of hunting and gathering from our favorite resources... it just made sense to load the truck  and head her way to put it all together...

 

We left Little Rock at 5:00 AM and arrived at our clients home at 1:30PM...Only one stop for gas and a potty break...

 

 

The three of us worked non-stop until 7:30PM...installing draperies...hanging art...and putting everything in it's place...

The only thing in the family and breakfast room when we arrived was this sofa less the pillows...

Just a sneek peak from my i-phone...we will do a full before and after post when a lantern arrives and is installed and just a few more details are complete...

 

 

We got up the next morning and went back to the house to discuss a few things and take pics of the living room, dining room, and foyer...that's the next project...

Before we left town,we also visited one of our clients good friends, who has now hired us to do some work for her ...she has a lovely home and we are excited to get started on the project...

 

But it's Sunday...and we've got Supper to talk about...

I pinned this wonderful recipe from Mogwai Soup last week...

 

Enchilada Lasagna

 

 

Ingredients:

2 tbsp of vegetable oil

1 lbs chicken breast, chopped to bite size pieces

5 cups of mexican blend cheese

1 can of cream of celery soup

1 can of cream of chicken soup

1 1/2 cups sour cream

1/4 cup canned chopped green chillies (drained)

small corn tortillas

1 tsp cumin

2 tsp salt

1/2 tsp pepper

 

Directions:

Brown chicken in a pan in 2 tbsp of oil. Season with salt and pepper. In a bowl combine cream of celery soup, cream of chicken soup, sour cream and green chillies. Prepare a bowl of water that you will dip your corn tortillas in, and the dish you will assemble the lasagna in. Put 1/2 cup of cream mix on the bottom of the baking dish and spread. Layer a row of tortillas followed with cream mix, chicken and cheese. You should be able to make 3 layers like this. Last layer doesn't need chicken, just a ton of cheese. That is the best part!

Preheat the oven to 425 degrees and let it bake for about 20 minutes or until cheese is nice and melted and golden brown on top...

Sunday Supper...Grilled Bruschetta Chicken

Happy Mother's Day!!!

It's been a great week.  We celebrated Mother's Day on Wednesday with our Mom because Sister left Thursday for a long weekend in Dallas.  Have just been waiting to try this recipe for Grilled Chicken Bruschetta...

Sounds full of flavor, only 200 calories, and has only five ingredients. It has all the flavors of bruschetta but without the bread...or the carbs.

 

Ingredients

4 small boneless skinless chicken breast halves (1 lb.)
1/4 cup sundried tomato dressing, divided
1 tomato, finely chopped
1/2 cup shredded low-moisture part-skim mozzarella cheese
1/4 cup chopped fresh basil or 1 tsp. dried basil leaves

Directions

  1. Place large sheet of heavy-duty foil over half of grill grate; heat grill to medium heat. Meanwhile, place chicken in resealable plastic bag. Add 2 Tbsp. dressing; seal bag. Turn bag over several times to evenly coat chicken with dressing. Refrigerate 10 min. Remove chicken from bag; discard bag and dressing.
  2. Grill chicken on uncovered side of grill 6 min. Meanwhile, combine remaining dressing, tomatoes, cheese and basil.
  3. Turn chicken over; place, cooked-side up, on foil on grill. Top with tomato mixture. Close lid. Grill 8 min. or until chicken is done (165ºF).

Serves 4.

 

 

Looks yummy!!  Would be great with a pasta side, but it's that time of year...we're watching those carbs so it's a great big salad for us.

There's A New Store In Town...Rock Paper Scissors

 

 I apologize for the lack of posting lately but am thankful to be so busy.  We're really excited to share a new resource. For those of you who are out of town, not to worry...  the good news is they ship anything, anywhere!

 

 

 

 Rock Paper Scissors recently opened in the Promenade at Chenal in West Little Rock, just a few doors down from The Anthropology Store.  The shop is the brain child of Reggie Marshall and Jim Clements.   These guys, owners of the antiques store Marshall Clements, travel the earth for you. The duo specializes in discovering unusual pieces from times and worlds long forgotten and showcasing them for sale in their 12,000 square foot showroom in Riverdale.

Just wait till you see what they have brought to West little Rock...

 

 

 

Jim and Reggie have been designing and developing their style together for over 30 years.  Don and I first discovered them 23 years ago soon after we were married. We purchased our first " real" art from them.  That was the beginning of a lifetime of art collecting for us as a couple. 

 At the time they had a little shop in Sheridan, Arkansas.  Our first purchase was this painting of The Fishing Bank signed by H. Wilson.  It hangs in Don's study today...

 

The next painting we bought from them originally hung in our dining room.  She's at home in the Master bath now and we're still very fond of her.  The patina of the old frame is almost as beautiful as the painting...

 

 

Through the years we've continued to be friends and bought many other things from them for both ourselves and clients. 

One of the things that they are known for all across the country are their fabulous ottomans and pillows made from beautiful fabrics and antique textiles...

 

 

 

 

These guys do everything in a big way, including the wonderful opening party they threw last weekend...

I was introduced to Trey McCarley who's art will be featured in the store...

 

Trey has a bachelor's degree in Landscape Architecture and studied for six weeks in Italy, France and England where his desire to paint really took off.  He works primarily in oil using vivid color and intense brushwork.  His work is really beautiful.

 

 

We're excited to have this new resource available.  One of the exciting things about the store is that the offering is so timeless.  It's not a strictly, French or Belgian or Italian or English look.  Jim describes it as " decayed elegance"  and that's what we're all about.
