Sunday Supper...Easy Chicken Marsala

Crazy...Crazy...Crazy...that is our lives right now...

Worked all day at Fabulous Finds on Saturday bringing in new merchandise and rearranging everything...so happy to get it done because there is simply no time next week...

If you live in the area...you need to come and see us...we have some fabulous things...

But it's rainy...and cooler and we are ready to cook a cozy meal and relax a bit before Monday...

Easy Chicken Marsala

Ingredients

2 skinless, boneless, chicken breasts

salt and freshly ground black pepper

1/2 cup all purpose flour or corn starch for gluten-free

up to 1/2 cup olive or vegetable oil

8 ounce container of mushrooms, sliced and cleaned

2 tablespoons butter

1/2 cup sweet Marsala wine

1/4 cup chicken stock

1/4 cup sherry or dry white wine

Optional: 2 tablespoons heavy cream

Garnish with chopped parsley or oregano

Instructions

Split each chicken breast through the middle to make 2 pieces. Place plastic wrap over them and pound each one flat using a meat tenderizer/mallet until they are about a quarter inch thick. Season a good amount of salt and pepper on both sides of each piece. Place some flour on a plate and and dredge each piece of chicken in it. Heat the oil over medium-high heat and when the oil is hot fry each piece of chicken for 3-4 minutes on each side until they are golden brown (this may require you to do this in 2 batches).

Remove chicken and place them on your serving platter covering them with foil. carefully soak up any remaining oil with paper towels and discard.

Reduce the heat to medium and add butter and mushrooms. Saute mushrooms for 4-5 minutes making sure to season them with salt and pepper lightly. Add marsala wine, sherry, cream, and chicken stock allowing the liquid to reduce slightly – approx. 3 minutes.

Pour mushrooms and sauce over chicken and serve. Enjoy!

Add a simple pasta and salad and what could be better?

Sad but true...

I just don't focus as well any more...so much going on that I often just turn in circles...

Sister has to turn me back around...and so goes with blogging...just have to squeeze a post in when we can...but I stumbled on to a new designer to "us"...(you may know all about him)...and we are overwhelmed with his work...

Living Room and Foyer Design...It's Friday and it's Fabulous!

Another busy week...but today is Friday and it's Fabulous...

Saw this image on Pinterest this week and had to share...

The space is so amazing that one image is worthy of an entire post...Every single detail is perfection...

This appears to be a living room with the ottoman in the center and the books piled on top...but there are a lot of great foyer elements here as well... The walls are beautiful...love love the layered mirrors...amazing chairs...gorgeous chandelier...fabulous lamps...the floor...the rug...the ottoman...

I don't know who to credit this fabulous design to...French Mademoiselle Blogspot pinned the image but I can't find a credit.  Do you know who designed this fabulous space?
