Sunday Supper...Crispy Skinned Chicken a l'Orange  

 

We all like simple chicken recipes...and this is one that you will definitely want to try...

Crispy Skinned Chicken a l'Orange

Ingredients:

Kosher salt and freshly ground black pepper

 3 skin-on bone-in chicken breast halves

1 tablespoon vegetable oil

1/2 cup frozen orange juice concentrate

4 tablespoons honey

Directions:

Preheat the oven to 375 degrees F. Liberally salt and pepper the chicken breast halves. Heat the oil in a large saute pan over medium-high heat and sear the chicken, skin side only, until brown and beginning to crisp, about 5 minutes.

Meanwhile, make the orange glaze: In a small saucepan, heat the orange juice concentrate, honey, and salt and pepper, to taste, over medium heat, and boil for 3 minutes. Remove from the heat.

Turn the chicken over and brush each piece with the glaze. Turn the chicken skin side up and transfer the pan to the oven. Bake until the internal temperature reaches 160 to 170 degrees F on an instant-read thermometer, brushing on more glaze halfway through, about 15 minutes in total.

Let the chicken rest for 10 minutes on a cutting board. Remove the chicken breast from the bone and slice the meat on the bias.

Transfer the chicken to a serving platter and serve.

Sunday Supper... Tomato and Whipped Feta Brushcetta...and a great sale

 

Had a leisurely Saturday morning watching the cooking channel ...

 

Really enjoyed the Barefoot Contessa in Napa segment...

She and her husband Geoffrey have rented a home in Napa ...and it is fabulous. I could move right in...the gardens were absolutely divine...anyway, I'm all over her recipe for bruschetta with creamed feta...

Was very disappointed that I couldn't find it online...but I searched for a similar recipe...and added my own twist to make it more similar to the Barefoot Contessas'

 

 

 

 INGREDIENTS

Chopped fresh tomatoes...yellow and red

1 medium garlic clove, minced

2 tablespoons red wine vinegar

2 tablespoons sugar

1/4 teaspoon red pepper flakes

table salt

8 ounces feta cheese, crumbled

2 teaspoons juice from 1 lemon

2 tablespoons extra virgin olive oil

ground black pepper

1 baugette

DIRECTIONS

 Combine tomatoes, garlic, vinegar, sugar, pepper flakes, and 1/4 teaspoon salt in a medium bowl.

Process feta, lemon juice, olive oil, and 1/4 teaspoon black pepper in a food processor until smooth, about 10 seconds, scraping down bowl with spatula once during processing.

Divide feta mixture among toasts and spread to edges. Using fork, lift tomatoes from vinegar mixture and place on toast. Drizzle with olive oil and serve.

It's Friday and it's Fabulous...Candles

 

Do you like candles as much as we do?  

My husband swears that I'm going to burn the house down some day...but I'm a real mood girl...

what can I say?

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

And finally , don't you just love this idea?...

Cut the bottoms off of wine bottles to cover candles and keep the wind from blowing them out...

How clever!

Sunday Supper...Jalapeno Cilantro Chicken and Rice Casserole

 

24 days till Christmas...

Can you believe it? We love this time of year...

Sister's birthday is Monday...and we've been celebrating all weekend...we went to see Irving Berlin's "White Christmas" last night at the Arkansas Repertory Theatre...it was soooo good, and really amped my Christmas Spirit...Would so love a white Christmas!!!

 

 

 

I've decided it's time to dive into some of those comfort food recipes that I've been saving for Winter...

Tonight it's... Jalapeno, Cilantro, Chicken & Rice Casserole-- no "cream of..." anything!

 

The recipe is from Culinary.Net.

 

 

 

Ingredients

2 cups cooked rice

2 cups (8 ounces) shredded Monterey Jack cheese

1 1/2 cups cooked, chopped chicken breast meat

1 can (12 fluid ounces) Nestlé Carnation Evaporated Milk

1/2 cup finely chopped red onion

2 large eggs, lightly beaten

1/4 cup finely chopped cilantro

2 tablespoons butter or margarine, melted

1 tablespoon diced jalapeños

Salt

 

Preparation

PREHEAT oven to 350–F. Lightly grease 2-quart casserole. COMBINE rice, cheese, chicken, evaporated milk, onion, eggs, cilantro, butter and jalapeños in prepared casserole; stir well. BAKE 45 to 50 minutes or until knife inserted in center comes out clean. Season with salt.

It's a busy week ahead, so this will make great leftovers...
