Sunday Supper...Avocado Basil Pasta

 

I think the reason our Sunday Supper's are so poular is that they are always relatively simple... We love good food, but don't have the time for involved recipes...

This one is amazing...So simple...yet, full of flavor.

 

Avocado Basil Pasta With Bacon

 

 

 

Ingredients:

8 ounces dried bow tie pasta

2 medium avocados, halved, seeded, peeled, and coarsely chopped

 6 slices bacon, crisp cooked, drained, and crumbled

 2/3 cupchopped fresh basil

2 tablespoons lemon juice

1 tablespoon olive oil

3 cloves garlic, minced

1/4 teaspoon ground black pepper

1/8 teaspoon salt

1/2 cup finely shredded Pecorino Romano cheese

 

Directions:

Cook pasta according to package directions. Drain. Meanwhile, in a large bowl combine the avocados, bacon, basil, lemon juice, olive oil, garlic, pepper, and salt. Add the hot pasta and toss to combine. Transfer to a serving bowl. Sprinkle with cheese. Makes 4 servings.

 

It doesn't matter if you are cooking for two or a crowd...a bit of atmosphere makes the simplest of meals more special..I light candles every night for just Don and I.

Another scrumptious meal and this one looks so easy to make! I made Chicken Fried Rice last night and it was also an easy recipe. I'm all for easy! LOL

This will probably be dinner tomorrow night as my son is having a test on Tues. that doesn't allow him to eat all day tomorrow…I need something simply but good…and one that he won't really have to know about! Sally and I love hurricane lamps on our porch table.

This weekend, we had friends over for dinner. One of our guests brought a bottle of Gran Sasso Percorino Terre de Chieti white wine. Served chilled, it tasted of honey, melon fruit, sweet herbs with a very slight hint of spic. I bet it would go beautifully with your salad. It is made from the Percorino grape and is from the same region percorino cheese is made. Today, no one can remember which got it's name first, the grape or the cheese. All agree it pairs wonderfully with percorino cheese.
